DIY Macaroon Ornament

I have always loved macaroons. I love the smooth, light, airy texture, the crunch, and how the pretty pastel sandwich almost melts in your mouth. I love that each treat is like a mini (delicious) present, almost too darling to eat. I love that they remind me of being in Paris. I love that any time you eat them, you feel special and sophisticated.

When I eat them, I want to say, “Hey everyone, look what I’m doing!”, but I’m much too demure and fancy when I’m indulging in the charming little treat to do so (so I Instagram it instead). I also love that macaroons remind me of my mom.

So for her birthday today, I decided to make her macaroon ornaments; now she can have sweet macaroons that will last! You can make your very own macaroon craft, which would not only make adorable ornaments but also cute desk accessories or paper weights. Make them for yourself, your office, or for friends and family. All you need is a few simple supplies, an oven, and you’re ready to go.

 

Simply Healthy Deli Boat

When I find foods I like, I generally can eat them everyday. This works well for planning lunches for work but can get monotonous, especially over the weekend when I generally crave something more substantial. My go-to lunches are my Simply The Best Healthy Tuna Salad, cherry tomatoes with cottage cheese, or hard boiled eggs.

Anyway, this weekend my husband made these deliciously filling, completely healthy deli boats that satiated my desire to eat something bad for me…except they’re not!

Not only are these simple to make, these deli boats are pretty, soooooo tasty, and fun to eat. I seriously now prefer this to a traditional sandwich and it’s easier to eat and assemble it as a ‘boat’ (as I call it) than a wrap.

Simply Fluffy Pumpkin Pancakes

Although I enjoy cooking, I’m lucky to have a husband who is the primary cook in our family – plus, he’s ten times better than I am anyway. However, cooking breakfast food, my favorite meal of all time, is my forte. My husband is out of town, so what better way to honor the fall season and my love for breakfast than to make pumpkin pancakes for dinner?

They’re extremely filling, so they work well for dinner, and you can throw them in the waffle iron for a yummy crunchy waffle instead.

I ate these for dinner last night with turkey sausage, and after a rough night with my daughter, I decided to put a sinful spin on my breakfast and added a smear of Nutella to start the day off right. Hey, I balanced it with a side of pineapple – that counts for something, right?
